Stopover on one way

Question: I am thinking of transferring Membership Rewards points to AC for a one way flight from Europe to JFK. Can I stopover in NYC and continue to Vancouver a couple of months later?

If not, any suggestions on a Star Alliance MR transfer where I might be able to?
